Accessibility

E-learning is available in the workplace or at home 24 hours a day, 7 days a week and can be delivered at a time to suit both the trainee and the business. New staff can start their training immediately; part-time and shift workers can learn before or after their normal shifts and management can make good use of unexpected quiet periods.

Certificated HACCP awareness courses

Foundation Certificate in Food Hygiene

A first level course incorporating fundamental food hygiene knowledge for all food handlers. The programme covers a defined syllabus. Candidates are assessed by objective tests of 30 multi-choice questions. A full colour student reference booklet "The Food Safety First Principles Workbook" is included for each of the candidates.

Designed for: Food handlers
Teaching time: Minimum six hours
Exam format: 30 multiple choice questions

Intermediate Certificate in Food Hygiene

The course is designed for those working in any food business including traditional supervisors, team leaders and anyone who needs a broad understanding of food hygiene as part of their work. This programme is an ideal development stage for those considering progression to the advanced level programme and is also appropriate preparation for those wishing to complete the Hazard Analysis - Principles & Practice Certificate. Successful Intermediate candidates will be able to play an active role in auditing, developing hygiene standards, and provide support for hazard analysis and training programmes.

A full colour student reference book is included.

Teaching time: Minimum 18 hours
Exam format: Two hour written exam, 10 Questions

Advanced Certificate in Food Hygiene

The course is designed for those working in medium to large scale businesses who have responsibility for the management of food hygiene issues. It is also an appropriate technical qualification for those wishing to apply to deliver level 1 training. The programme covers a defined syllabus requiring a minimum of 36 hours study and students are assessed on their performance in a 2.5 hour examination representing 50% of the final grade together with two course assignments representing the balance.

Successful Advanced candidates are able to manage food safety in most food businesses, by developing auditing and monitoring programmes, designing hygienic practices and procedures, liaising with enforcement officers, staff training, interpreting legal requirements and establishing hazard analysis projects (with additional training where necessary).

Teaching time: Minimum 36 hours
Exam format: Two assignments and 2.5 hour exam

Hazard Analysis Principles and Practice

This programme is designed for managers and senior supervisors. It is recommended that students would already have achieved, as a minimum, the CIEH Intermediate Certificate in Food Hygiene. The 2-day certificated programme equips those with hazard analysis responsibilities with the necessary knowledge and skills required to analyse a food operation, design and implement food safety controls, set up monitoring systems, consider the legal requirements and how to comply with them. Students will be assessed on a 2-hour case study assignment completed as part of the programme.
